Beijing food culture is rich in variety. There are at least two to three hundred kinds of famous dishes and snacks. To everyone’s delight, Peking Roast Duck and Chinese Yogurt can really cheer life.

Peking Roast Duck is the must-eat item when travelling to Beijing. It has a history of about 1,500 years. In the very past, the method of making roast duck was to remove all the duck’s internal organs and put the mixture of lamb’s stomach, parsley, onion and salt inside the duck. After that, the whole duck was charbroiled with a fork.

But today, the method is different. No mixture of lamb’s stomach is put inside the duck. The chef will fill air between the duck’s skin and flesh in order to separate the skin and flesh. And then, he will coat the duck with malt syrup and let it dry.

The baking method is to pour water into the duck before putting it into the oven and then release the water when it is done. Date, peach, pear and other hardwoods are used for fuel in the oven because they have less smoke and smell pleasant.

Yogurt is one of the typical old Beijing snacks. “Wen Yu Yogurt Shop”, located in Nanluoguxing, is the most famous one in Beijing. It is a small shop that sells royal snacks such as yogurt and Double Layered Milk Custard.

Wen Yu’s yogurt is not greasy but with light milky flavor and a little sour. The milky and creamy flavor of the Double Layered Milk Custard, on the other hand, is much richer. People who are fond of milk will love it. Besides, Milk Roll is another must-eat item. It is rich in milk flavor with red bean paste.
